Every Tuesday I go to a peer support group that teaches you how to live with mental illness and it is also a great social get together. Today we were learning about different types of commonly prescribed medications to treat mental illness. At the meeting I drank 2 cups of unsweetened green tea.
After the meeting I decided to taste test my fermenting pickles, and yep they are definitely getting cultured. They should be done on Thursday and be ready to go in the fridge and give to family. This is what they look like so far.
For dinner tonight I decided to go vegan and made a vegan spicy noodle curry and I drank 2 cups 100% unsweetened concord grape juice.
1 cup mushrooms
1 zucchini
1 ear corn
2 medium carrots
1 small onion
3 cloves garlic
2 tbsp coconut oil
1/4 cup curry powder
Indian Black Salt
1 can fire roasted tomatoes
2 cups vegetable broth
1/2 cup peanut butter
1 package brown rice noodles
garnish with garlic chili sauce and nuts
