Lunch

18 oz unsweetened grape juice

2 cups unsweetened green tea

 18 oz. water




Vegan potato, black bean, and quinoa manwich casserole
3 medium red potatoes
1 medium zucchini or yellow squash
1 medium onion
1 small bell pepper
2 cloves garlic
1 can low sodium black beans
1 can manwich sauce
cumin
garlic powder
red pepper flakes
sea salt
pepper
3 tbsp coconut oil
1/4 cup dry quinoa
top with hemp seeds and rolled oats or barely flakes
drizzle with your favorite vegan steak sauce



Note: If you are a meat eater and trying to up your protein try adding either ground browned 1 lb. of turkey or beef to the casserole.
